SUMMER POTATO SALAD
My summer potato salad is super simple to make and doesn't take much time at all because there are no eggs involved. Most of the ingredients you probably have on hand already which just simplifies it more.
Did I mention its also delicious? It is!
Its great for summer when you have unexpected guests show up for the weekend or are looking to casually entertain a few friends for an evening. I love to keep onhand premade frozen hamburger patties and buns for just such an occasion, and this summer potato salad goes perfectly with them and can be made in about 40 minutes, for most of which you don't even need to be in the kitchen. Which means you can be entertaining your guests!
