I have a very picky eater in my 5 year old. He is fairly anti-breakfast unless it involves pancakes or donuts; 2 thing I refuse to give him before school on the weekdays. My 3 year old loves oatmeal, but the 5 year old won’t touch it with a 10 foot stick. In an effort to find something 1) he would eat, 2) healthy, and 3) wouldn’t take forever to make before school I went on the hunt (on Pinterest, of course) for a new breakfast recipe. I tried several, but this one was the clear winner!
These No Bake Granola Bars from Made from Pinterest are super easy to make, can be made ahead, and make enough to last a couple weeks. All of which reads to me as win, win, win! And the cherry on top? My 5 year old loves them! There is a little bit of butter and a little bit of sugar, but really not that much. And we tried breakfast recipes that didn’t contain either of those and, honestly, they weren’t as good.
We make up a batch of these granola bars then split them into half chocolate chip and the other half peanut butter. That way the little on has some variety to choose from every morning. I do substitute the shredded coconut with chopped mixed nuts.
