Lately my boys have been on a shrimp kick so I’ve been scouring the web for easy recipes for them. I love that they will both eat shrimp because at their age I would not touch it. I almost always use it in some sort of pasta, but in an effort to step away from the carbs, I decided to try something completely different!

This Shrimp Zoodles recipe from Skinny Taste tells you exactly how to make zoodles without over or undercooking the zucchini. They are simply delicious! And my kids ate them! It was totally a win-win recipe. The downside? It takes a lot of zucchini to feed us all so it’s a lot of work to julienne them, but completely worth it to feed to my kids over regular pasta noodles every once in a while.
