I think I must have been an Italian in a past life. Pasta, pesto, Italian seasoning… I can’t get enough! Today’s side dish is decidedly Italian and oh so yummy. And, surprisingly, low calorie for an Italian dish! It is also super easy to make and a great side for most any meal.
Allow me to present Italian Roasted Mushrooms & Veggies from Jo Cooks, a.k.a. the perfect side dish. This dish seriously couldn’t be easier to make and would be wonderful alongside anything you cook on the grill this summer. I did attempt to add broccoli to it but can see why it wasn’t added in the first place. It cooks a bit faster in the oven than the other veggies and got a little black on the tips. I’ll be using only the vegetables mentioned in the recipe next time. Yum!
