I am so excited to be back here sharing a holiday recipe with you guys for the homemade recipe week. Baking has been a passion of mine for many many years. In fact, I hardly ever get asked to bring a main course to any meal. I don’t mind at all:-) It gives me a chance to get in the kitchen and try out some new recipes. Ha ha…who am I kidding? I am in my kitchen a couple times a week making tasty goodies. I tease my husband all the time that when he is at work…we only eat brownies and cookies for dinner.

Today I am sharing some holiday cheesecake bars with you. I wanted to change up my Ultimate Reeses Cheesecake Bars that I made last month. They needed to be more holiday friendly. As I was pulling out baking supplies from my cupboard, I came across a bag of Andes Peppermint Crunch baking chips that I had bought a few weeks ago. I also decided to jazz up the brownies with some instant coffee and added the peppermint crunch to the cheesecake layer…and viola…the Peppermint Crunch Cheesecake bars were born.

Peppermint Crunch Cheesecake Bars

1 brownie mix
3 tbsp. instant coffee
1 (8 oz.) cream cheese softened
2 tbsp. butter, softened
1 (14 oz.) sweetened condensed milk
1 tbsp. cornstarch
1 egg
1 tsp. vanilla
2 cups peppermint crunch baking chips

Preheat the oven to 350*. Mix brownies according to package. Add 3 tbsp. instant coffee to your water before mixing it in with the brownie mix. Spread in a greased 9×13 pan. Beat cream cheese and butter until fluffy. Add cornstarch and beat until mixed in. Beat in milk, egg and vanilla until smooth. Stir in peppermint crunch chips. Spread the cheesecake on top of the brownies very carefully. (you can swirl it in if you like) Bake 35-40 minutes or until cheesecake layer is set and very light golden brown. Cool. Keep refrigerated. Serve with cool whip and extra peppermint crunch chips. Enjoy.
