Mini Triple Chocolate Cheesecakes {Homemade Christmas Recipes}

I was super thrilled when Michele asked me
to guest blog again for her Homemade Christmas party!!!
She knows how much I love to share my sugar addictions with others!!
One of my absolute favorite treats to make year round is cheesecake.
So this Christmas season I will be bringing some all chocolate
mini cheesecakes to the parties we attend.
Who can resist them when they are fun sized, right?
It just means you can eat a few more without others judging you!!!
Let’s get our cheesecake on…
chocolate stye!!!
Triple Chocolate Cheesecake
2-8 oz. packages cream cheese, softened
1/2 c. sugar
2 eggs
2 Tbsp. sour cream
1 tsp. vanilla
3/4 c. chocolate chips, melted
oreo cookies

Chocolate Cheesecake Mousse layer
1-8 oz. package cream cheese, softened
1-8 oz. tub cool whip, thawed
1/2 c. chocolate chips, melted
mini chocolate chips, for top

Beat cream cheese until creamy. Slowly beat in melted chocolate chips until incorporated. Fold in cool whip.

Preheat oven to 350* Line cupcake pan with liners and drop an oreo into the bottom of each. Beat the cream cheese and sugar until creamy. Add the eggs, sour cream, vanilla and beat until fluffy. Melt the chocolate chips in a microwave safe bowl and slowly beat into the cheesecake mixture. Fill each liner 2/3 full. Bake 20 minutes. Cool in pan for about 15 minutes, then remove to wire rack to cool completely. Top with a large spoonful of chocolate cheesecake mousse and dip in mini chocolate chips. Refrigerate. Makes 20 mini cheesecakes.
