Individual Blackberry Cobblers

August 28, 2013 By: Michele McDonald8 Comments

I think after strawberries, blackberries are my favorite fruit! And one of my favorite desserts to make with blackberries is definitely a good cobbler. Fresh blackberries mixed with cake and topped with whipped cream… YUM!!
I thought I would share my recipe for cobbler, hailed from my late grandmother,
and how you can easily dress up this simple dessert by serving it in individual containers.
It really is as easy as 1, 2, 3!

Individual Blackberry Cobblers

Ingredients (serves 6)
  • 6 Tbsp Butter or Margarine
  • 1 cup sugar
  • 1 cup self-rising flour
  • 1 cup milk
  • 2 cups blackberries
Instructions
Arrange 6 ramekins (or half pint Mason jars) on a cookie sheet and add 1 tablespoon of butter each. Set oven to 350 degrees F and place cookie sheet in the oven as it warms to melt butter. Once melted, remove from oven.
While butter is melting in the oven, mix sugar, flour, and milk until there are no lumps.
Place 1/3 cup of blackberries into each ramekin on top of melted butter. Evenly distribute batter over blackberries.
Cook for 35 minutes or until top is golden. Allow to cool for 15 minutes before handling. Top with a dollop of Cool Whip.

To make a large cobbler instead of individual ones, place 1 stick of butter in a 9″x13″ cake pan then follow all of the other directions. Allow to cook for an extra 10 minutes or until golden.

We have loads of blackberries around here, so will have a go at this soon!
Just one thing, (I’m being a bit dense), you say bake at 350 degrees, what Gas mark or Centigrade measurement is this? So I can convert it for my oven.
    Thank You!

Hi Sandie! Great question, and I will clarify it in the recipe. It is 350 degrees Fahrenheit (that’s ~177 degrees in Celsius). 🙂
