Soooooo, it’s no secret that potatoes and I have a special relationship. They are by FAR my favorite vegetable. Of course. Because they have the least health benefits. And taste best when fried in some way. Which makes them pretty much unhealthy.
But today’s potato recipe is BAKED not fried so that’s an improvement, right? And they were soooo tasty I can’t imagine they were that bad for me…
Potato skins, you guys! It’s a classic potato recipe that I found the specifics for at Simply Recipes. They are so good and so easy to make, and definitely good for a crowd. If you’ve only ever eaten them out and never tried to make them at home I encourage you to give them a try. They’ve even inspired to me to alter them slightly and turn them into a meal for the family! I’ll be trying that out on them soon.
