10 Minute Shrimp Caesar Salad Recipe

I am all about quick and simple meals for my family.
And this shrimp Caesar salad fits the bill perfectly since it can be made in 10 minutes or less!
I take a couple of shortcuts in this recipe that you may or may not want to take.
For me, they make life simpler and maintain a delicious meal.

First up, I used bagged frozen shrimp that you can find in the freezer section of your grocery store.
The frozen shrimp can be added directly to your boiling water saving thaw time.
You could substitute grilled chicken for the shrimp or use no meat at all.
Next, I use bagged spinach from the produce section.
Open the bag, put in the bowl… its a no brainer for me!

Shrimp Caesar Salad

Ingredients (serves 4)

  • shrimp
  • 2 TBSP butter
  • spinach
  • croutons
  • shredded Parmesan cheese
Salad dressing
    • 1 lemon
    • 3/4 tsp Dijon mustard
    • 3/4 tsp Worcestershire sauce
    • 1 large garlic clove, pressed
    • 1/2 tsp black pepper
    • 1/4 cup mayonnaise
    • 1/2 cup olive oil
    • 1/4 cup grated Parmesan cheese
Instructions
Cook shrimp in boiling water for 5 minutes or until they turn pink. Drain pot of water and add butter. Toss shrimp in butter until lightly browned. Remove from heat.
Juice the lemon until you have 2 tablespoons of juice; place in a small bowl. Add mustard, Worcestershire sauce, garlic, and pepper; whisk until blended. Add mayonnaise; whisk until smooth. While continually whisking, add oil to dressing in a thin, steady stream. Continue whisking until blended; stir in Parmesan cheese. Cover and refrigerate until ready to serve. (Dressing can be store cover in the refrigerator for up to 2 weeks.)
Wash and dry spinach if necessary. Add to a bowl with croutons and shredded Parmesan cheese. Add desired amount of salad dressing. Top with 6-8 pieces of shrimp.
