Get ready to throw the rotten tomatoes at me because I have a confession that some of you aren’t going to like.
I don’t like pumpkin. Pumpkin lattes, pumpkin pie, pumpkin spice… Woah! That’s a load off of my chest. So many of my friends and family are going ga-ga right now over all things pumpkin, and I’m all like “I love apples?” 🙂
However, I might be able to redeem myself in your eye because there is ONE pumpkin recipe that I love and make myself, typically for Thanksgiving dessert. If you love pumpkin (and even if you don’t!) I think you are going to like this recipe!
Libby’s Pumpkin Roll at Very Best Baking is the recipe you find on the Libby’s canned pumpkin. And it is delicious!! I think the cream cheese helps overcome the powerful pumpkin taste for me. But I love to make this recipe (making a roll is not as hard as you might think), and my family gobbles it up!
Oh, and I leave off the walnuts. I’m not wild about nuts in my desserts.
