Social Saturday – Fruit Popsicle Recipe

A few weeks ago I picked up some make-your-own popsicle holders in the dollar bin at Michael’s. I think I need to go back for more! We’ve had a blast making (and eating!) popsicles! And using just fruit and orange juice, I’m willing to let my toddler have one whenever he wants. 🙂

These are strawberry banana popsicles and could not be simpler to make.
And strawberries are so affordable right now – I love that!
Strawberry Banana Popsicles
(makes 6 popcicles)
1 carton of strawberries
1 banana
1/2 cup of orange juice
Cut the caps off of the strawberries then cut the berries in half. Cut banana into small pieces. Add the strawberries, banana pieces, and orange juice to a blender (or food processor) and pulse until liquefied. Poor into popsicle mold and place in the freezer for several hours. Place any leftover fruit conoction in the fridge for future popsicles or drink as a fruit smoothie.
That’s it! So easy! We will be making these ALL summer.

I’m missing my little man. He has spent the better part of the last week at the beach with his grandparents. I’m super jealous! But going to the beach with a 3 month old didn’t sound appealing so the rest of us stayed home. Luckily he’ll be back tomorrow because I’m missing his little hugs!

And last but not least, did you know I love to garden? I grow most of my veggies from seed. I just find it so rewarding! This year I decided to give potatoes a try. I had a potato from the store that had started to root so I became an expert at potato growing (thanks to YouTube – ha!) and cut that potato up and threw it into a couple of buckets of dirt.
Its been a couple of months now so I decided to root around in the bucket and see how the potatoes were doing. I found that little spud in the above picture! Too fun! Hopefully in another couple of months I’ll have two buckets full of potatoes. We shall see!
