Happy Tuesday! Let’s celebrate today with a new recipe, shall we?
I confess I have a weakness for carbs. A major weakness. I could eat potatoes in just about any form every day of the week. In fact, most of the side dishes I have pinned on Pinterest contain recipes for potatoes! I’m working to expand my vegetable recipes but, in the meantime, I’m sharing my all time favorite way to make potatoes.
This recipe. Oh.My.Gosh. Where do I even begin??
Let me start out by saying we make these Parmesan Baked Potato Halves from Favorite Family Recipes all of the time. Like at least once every couple of weeks at least. They are unbelievably simple to whip and taste incredible!
This may not be the healthiest side dish, but they are great to whip up when company is coming over because it can make so many. I have tried all types of potatoes with this recipe: the cute little red ones, baked potato-sized ones, smallish golden potatoes… they all work great! We dip them in sour cream or, if I’m feeling frisky, I’ll whip up some copycat Outback Steakhouse cheese fry sauce.
And my tip: put the butter on the baking dish and melt it in the oven while the oven preheats. That’s one less thing to wash later!
