It doesn’t happen super often around here, but occasionally I need a recipe for an overripe banana. I like to mix it up with what I make and try new things. This recipe was a clear winner and perfect for breakfast!

A lot of my recipes for overripe bananas are desserts. Which is totally fine, but I like the idea of making alternative dishes. These Banana Streusel Muffins from In Katrina’s Kitchen are positively divine AND help keep breakfast entertaining if the boys get bored of their usual granola bars during the school week. The streusel topping is SO good. When I make the topping I make a lot and stash it in the fridge for the next 2 or 3 times I’ll use the recipe. That makes it even more simple!
